We source these Cashew nuts direct from co-operative of producers and ensure that the nuts are of an excellent quality classified as 1st quality ensuring that most of the nuts are whole and not broken.

Kithul Jaggery is a natural extract obtained from the large flower pod of the Kithul palm, the pod is bound with coir rope along its length and then the tip is sliced with a sharp knife. Traditionally every homestead has at least one Kithul palm amongst the wide selection of trees, spices and other products grown to support the traditional Singhalese cusine. Usually one family in an area will be interested in producing this product and will approach the surrounding homesteads to rent the palms. That family will then often sell the finished product direct to customers and then supply into a producer co-operative who market the Jaggery in its solid or treacle form to local shops and supermarkets.

This is the same natural extract from the Kithul Palm flower pod as for the treacle or honey form, however here the treacle is further reduced over a wood fire until the product thickens and then when poured into a plastic tub it becomes a solid block of a natural brown sugar. Natural Kithul Jaggery of this quality imparts a superb depth of flavour to any dish, similar to Muscovado sugar.
Palm sugar as it is often termed can be harvested from a variety of palms including the coconut flower pod, however the final product is of a light fawn or light brown colour. When harvested from the Kithul palm the end product is of a very high quality known for its depth of colour and the intensity of flavour that is developed from this particular palm.
It is known that the Kithul palm along with the Jak tree were highly prized around 500 B.C. when the Sinhalese first settled in Ceylon (Sri Lanka).

This is the same natural extract from the Kithul Palm flower pod as for the treacle form, however here the treacle is further reduced over a wood fire until the product thickens and then when poured into a half coconut shell the product cools to a solid dark brown half bowl of Jaggery. The half bowl is then traditionally wrapped into a dried banana leaf which best preserves the product and the method has been handed down from very early times.

Can be used to pour over puddings, or incorporated into the making of puddings or sweets. A superb sweet flavour. The product is a natural extract procured from binding the flower pod of the Kithul palm, slicing the end and allowing the natural liquor to flow into a receptacle and then boiling the liquor over a wood fire to drive off any excess water content leaving a thick syrup or treacle.
